2 to 3 cloves garlic
1/2 green pepper
1 large tomato
1/2 cup raw cashews
1 to 2 tablespoons raw olive oil
1 to 2 teaspoons cumin
1 teaspoon chili powder
Pinch cayenne pepper
Salt, to taste
Chopped red cabbage, as desired
1) Mince the garlic, dice the pepper, tomato, and avocado and combine in a large bowl. Set aside.
2) Crush the cashews into small pieces by putting them into a bowl and using a cup to grind them. Add cashews to the veggie mixture.
3) Combine oil, cumin, chili powder, cayenne, and turmeric in a small bowl and whisk to combine. Add to the veggie mixture, stirring well to combine.
4) Serve over cabbage leaves. It's a strange taco salad, yes...but satisfying nonetheless, I promise.
