2 slices bread
vegan Dijon or yellow mustard
baked tofu (any one you like)
Bake or fry your tofu however you like. Spread bread with mayo, mustard, tofu, sliced pickles. Then, spread the outside of the bread slices with a bit of margarine.
Optional: Heat up a non-stick pan to med-high. Grill sandwich until golden brown on each side.
This sandwich is delicious grilled or not!
