1 (16-ounce) box bowtie pasta
1/4 cup oil, to taste
1/4 cup vinegar, to taste
1 (15-ounce) can beans of choice
1/2 (15-ounce) can sweet corn
1 avocado, chopped
1 small green tomato, chopped
1 lime, juice of and zest of
1. Cook pasta according to package directions. Rinse with cold water to cool, then drain.
2. In a bowl, combine oil and vinegar. Add beans, corn, avocado, tomato, lime juice, and lime zest.
3. Add pasta; thoroughly toss.
4. Chill. Toss again just before serving.
