1/4 cup vegetable oil
3 tablespoons white vinegar
2 tablespoons apple cider vinegar
1 tablespoon water
1/4 cup raw sugar
2 tablespoons fresh dill
salt, or to taste
black pepper, or to taste
1 whole cucumber, peeled and sliced as thin as possible (1/8" thick)
1/2 yellow or white onion, sliced as thin as possible (1/8" thick)
1/2 cup whole or slivered almonds
1/4 cup golden raisins
1. In a bowl, combine vegetable oil, white vinegar, apple cider vinegar, and water; whisk to thoroughly blend.
2. Add sugar; whisk to dissolve (not all will be dissolved, but that's fine). Mix in dill, salt, and pepper. Mix in cucumber and onions.
3. Refrigerate 1 hour prior to serving.
4. Serve with almonds and golden raisins. ENJOY!
