3/4 cup walnuts
1/4 cup dates
1/2 vanilla bean
2 tablespoons dried unsweetened coconut flakes
1 tablespoons quick oats
1/4 teaspoon cinnamon
1/2 butternut squash
3 tablespoons maple syrup (or to taste)
2 splashes vanilla soymilk
Cut butternut squash into pieces and steam on the stove or in the microwave.
Blend walnuts and dates in food processor to make a soft crumble. Press mixture into a small bowl as you would with any crust.
Place the vanilla bean, coconut, oats, and cinnamon in food processor and grind to a fine flour. Then, add the steamed squash pieces, maple syrup, and soy milk to the mix. Blend.
Simply empty the mixture into the bowl with the crust, smooth over the top and enjoy!
