1 1/2 cups baby spinach leaves
1/2 carrot, chopped
5 fresh green beans, chopped in half
1/5 cup dried cranberries
1/2 orange, separated and cut in half
1/4 avocado, peeled and sliced
4 cherry tomatoes, sliced in half
2 radishes, sliced
3 tablespoons ground pecans
1 fake chicken patty, cooked and sliced
2 teaspoons extra virgin olive oil
2 teaspoons lemon juice
1 teaspoon red wine vinegar
1/2 teaspoon cranberry juice
This recipe is perfect for a light, lunch, and the above portions will serve one person. The sweet flavor of the cranberries and orange slices is just delicious combined with the spicy radishes and citrusy lemon juice!
Cook the fake chicken patty following the directions on the packaging and then slice, wash and cut the veggies. Combine the first ten ingredients to make the salad.
Combine the last four ingredients to create the dressing and serve immediately.
