1 batch vegan pizza dough (your favorite!)
1/4 - 1/2 cup olive oil (as needed)
1/4 cup fresh basil, chopped up (or other herbs)
2 cloves fresh garlic, pressed
1/2 cup black olives, diced fine
5 cup sliced/chopped summer veggies of your choice*
nutritional yeast (optional)
I came up with this pizza last night because DR wanted pizza and I didn't want to go to the co-op to get some cheeze. We also didn't have sauce, so this worked great! If you are missing some ingredients, I think this would be an easy pizza to play around with. Have fun!
Preheat your oven to 400 degrees, or whatever temperature is suggested for the dough you use. I don't think it matters a whole lot as long as it is HOT.
First, prepare your dough. I usually like to add some dried herbs to it for extra flavor.
Next, prepare the "dressing" by combing the oil (start with 1/4 cup and add more later, if needed), basil, garlic, salt, and olives in a large bowl. Stir well and set aside.
Next, wash and prepare your veggies. I used summer squash, fresh tomatoes, roasted red peppers, mushrooms. I know this is "tomato free" but I meant the sauce. But you can use anything you want, given that they are in this kind of "group" that will cook well in the oven (eggplant would be nice). Slice everything thin and put into the bowl with the dressing. Stir well to coat all the veggies with oil. Add more oil if needed.
Once you have the topping together, roll out your pizza crust. I usually put cornmeal on my pizza stone to keep things from sticking. Next, put the veggies on top, gently spooning them on and pushing them to cover the top of the pizza evenly. Make sure you don't have a lot of veggie slices stuck together or it won't cook well. Once the pizza looks good, you can sprinkle with some nutritional yeast if you want.
Place in oven for about 10-20 minutes, or until the crust is golden and the veggies are soft and done looking. I usually will do 8 minutes, check, and keep checking every 3-4 minutes until it looks good. It's cooking a pizza, not rocket science I guess.
Let cool a bit, slice and eat! Great the next day cold.
