1 large potato
2-3 tablespoons vegan butter (I use Earth Balance)
1/2 cup vegan sour cream
1/2 cup vegan ranch dressing, divided
1/4-1/2 teaspoon powdered garlic
1/4 teaspoon sea salt
1/4 teaspoon pepper, divided
1-2 jalapeno peppers, finely diced, optional
2 tablespoons diced red onion
1. Poke potato with a knife, and place in microwave. Start with 2 minutes and continue to check until done.
2. Once potato is cooked, mash it and put the vegan butter, sour cream, and 1/2 the vegan ranch dressing (1/4 cup) in, mixing well. Add garlic, salt, and 1/2 the pepper. Mix well.
3. Now add the onions and the jalapeño peppers, and mix well. Finally, smooth out the potatoes in the bowl and pour remaining vegan ranch dressing over the potatoes distributing evenly, and then distribute evenly the remaining black pepper.
4. After all this is done, place the bowl of potatoes in the microwave and heat for another 2 minutes until the edges are nice and bubbly. Take out carefully because it will be very hot! '
