1/5 packet silken tofu
1/5 yellow onion
handful chopped leek
1/5 baked potato, or some left over fries chopped up
1 tortilla cut in half
3 Tablespoons olive oil
good dab vegan mayonnaise
Pinch pepper and 2 pinches salt
Heat up the Tortillas in a oven, toaster or microwave. I do mine in the toaster:) Mix the oil and mayonnaise together in a bowl, chop up the onion, leek and tofu and toss into the mayonnaise mix. Then, add salt and pepper to your own liking.
Put the cut up potato in the tortilla and then the tofu (egg) salad and wrap it up for lunch. :)
