2 cloves garlic, finely chopped/crushed
1 medium onion
oil, for frying
1 (14 ounce) can chopped tomatoes
2 tablespoons tomato puree
2 teaspoons mixed herbs
salt and pepper, to taste
14 ounces frozen spinach
1. Fry the onion and garlic until soft. Add the tomatoes, tomato puree, herbs, salt and pepper. Leave on the heat until bubbling.
2. Once hot and bubbling, add spinach.
3. Leave on heat for about 20 minutes, stirring regularly to ensure spinach is mixed in thoroughly. Season, to taste.
Goes well with pasta or rice. Freezes well.
