2 cups flour (I use all purpose)
2 teaspoons baking powder
1/2 teaspoon baking soda
3 teaspoons cinnamon (or more if you like spicy carrot cake)
1 teaspoon salt
1 1/2 cup oil
2 cups sweetener
4 "eggs" (your choice of vegan egg replacer to replace 4 eggs)
2 cups grated carrots
1 small can crushed pineapple
1 1/2 chopped pecans (any nuts would work)
3/4 cup raisins (optional)
Preheat oven to 350F. Mix all ingredients together. Bake for 35 to 40 minutes. Cake is amazing with vegan cream cheese icing. Its also just as amazing without any icing, this is a very sweet, rich cake.
