1 apple (I used Cortland)
1/4 teaspoon cinnamon
1/4 teaspoon of nutmeg
1/2 cup of dry oatmeal
3 tablespoons of brown sugar
2 tablespoons of water
a handful of vegan chocolate chips (and a handful for you!:-)
3 teaspoons of vegan margarine
Cut your apple in bite-size pieces.
In a pan, cook the apple with 1 teaspoon of margarine. Add the cinnamon and the nutmeg, and let the apple cook until it becomes soft (but not baby food style, though!). Reserve in a bowl.
In the pan, put the remaining ingredients (except the chocolate chips) and cook until the brown sugar covers the oatmeal (but don't add too much water...the oatmeal is supposed to remain dry).
In 2 bowls, divide the oatmeal, add a handful of chocolate chips too each, and add the apple mixture on top!
