1 cup chopped and peeled raw beets
1/2 cup chopped mango
1/4 cup walnuts
2 Tablespoons agave nectar or other honey-like substitute
2-3 Tablespoons orange juice
NOTE - the beet and mango measurements are approximate. I find with salad, eyeballing based on hunger needs is the best form of measurement. :)
Prepare beets and mango if not already chopped. Place beet and mango pieces in a small bowl. Crush or chop walnuts; I usually just take the walnuts in my hands and squeeze them to break them into small pieces. Add walnuts to bowl.
In a small bowl, whisk sweetener and orange juice until well-blended and liquidy. Pour over beets, mango, and walnuts. Toss until contents are well-mixed and evenly coated with glaze.
Pour salad onto a plate and enjoy!
