1 1/4 cup mashed ripe bananas
1/3 cup soy buttermilk....1/3 cup soy milk+1 teaspoon lemon juice
1/2 cup brown sugar
2 tablespoon vegan soy butter
2 cup unbleached flour
1 tablespoon baking soda
1/2 teaspoon salt
1/2 cup walnuts
Preheat oven to 350' cream the soy butter and sugar. Add the soy buttermilk mix, then add bananas sift all dry ingredients into the wet mixture, try not to mix too much. Pour batter into an oiled 9x5 loaf pan. Bake for about 35-40 minutes/ or until toothpick inserted comes out clean.
