3-4 cups of cooked rice
1 package of soy chorizo (or taco-flavored crumbles, fake sausage...)
1 can of black beans
1 can of kidney beans
vegan sour cream (Tofutti brand is delicious)
If you have a rice cooker, use it. Awesome invention. Otherwise, cook rice according to directions. usually 1:1 water/rice ratio.
Add half (or all if you want) of the soy chorizo...it comes in a tube that is doubled like a traditional kielbasa.
Drain cans of beans and add.
You will probably need to add some salt to taste.
Serve warm with some cold vegan sour cream on top! Munch!
This mix is also really good in a burrito form---fill a tortilla and eat!
