1 can chick peas drained and rinsed
2 (or to taste) green onions chopped
2 stalks celery chopped
about 3 tablespoons of vegan mayo (there is a great recipe on the Ener G web site)
mustard to taste
1/4 cup cashew pieces
salt and pepper to taste
Coarsely mash the chick peas.
Add the rest of ingredients and mix.
Chill for about 30 minutes or so and enjoy!
Serve with bread, crackers, whatever.
It looks and actually tastes like chicken cashew salad...to me anyways.
