1 frozen banana, cut into slices
1-2 cups unsweetened soymilk
1 1/2 cups frozen mixed berries
1 package lite silken tofu
optional: scoop of vanilla protein powder
First of all, let me state that the measurements above are approximate -I usually just eyeball the berries and soymilk.
Add silken tofu, banana slices, soymilk, and frozen berries to blender. Whiz until mixed well. Use more or less soymilk depending on the consistency you desire. With less soymilk, it makes a wonderful creamy ice cream! I pour some into a glass and then stir in more soymilk if I want it more liquidy; but a lot of times, I'll just spoon it out of the blender and eat it like ice cream! It's protein and fiber packed, and super delicious!
