1 small apple, finely chopped
juice of 1/2 lemon
1 stalk celery, finely chopped
1 carrot, finely chopped
1 tablespoon finely chopped red onion
1 teaspoon dried mint
1/2 of a cucumber, finely chopped
tofu, balsamic vinegar, olive oil: optional, to taste.
Chop apple and place in bowl. Squeeze lemon juice over it. Chop other vegetables and add to bowl.
Mix in mint.
With the cucumber, I usually chop around the seeds in the center and then squeeze that section over the salad to release the cucumber juices.
If you like, add a few drops of balsamic vinegar or olive oil, or even some crumbled tofu.
