1 sachet (11g) of yeast
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon clove
1/4 teaspoon ground allspice
2oz/55g chopped almonds
1oz/25g candied orange peel
12oz/340g (whole wheat) flour
2 tablespoons oil
maple syrup (optional)
Add the salt and yeast in tepid water.
Mix in the dried fruit, peel and nuts.
Slowly add the dry ingredients.
Add the oil in the end.
Let it rise for 25-30 minutes.
Punch the biggest air bubbles down.
Put it in a loaf tin and let it rise for 30 minutes.
Bake in 200C/392F for 25 minutes.
Brush the surface with maple syrup straight after taking it out of the oven.
