1/4 cup white all purpose flour
plain rice milk, about 1 1/2 cups
I came up with this recipe when I had a hellacious craving for biscuits and gravy and my vegan boyfriend doesn't have anything in the house! :)
It's super easy, and only takes a few minutes.
First, put your flour in a pan (I used non stick), over medium high heat, stirring it around occasionally. You want it to brown. It takes a few minutes to get there, but watch it! 'Cause when it gets to the "browning point" it will do it really fast, and you don't want it too brown! When it starts to brown, stir it quickly until it is an even golden tan color (you may want to remove it from the heat at this point so it doesn't burn).
If it's not off the heat already, take it off. Slowly pour in your rice milk, whisking (important to have a whisk) briskly while you do it. It'll sizzle and thicken up really quick, pour in enough milk to get it gravy consistency. If it's a bit lumpy, just keep whisking, they'll go away.
Now add enough salt to make it taste right for you, a generous (I used very generous) dash of black pepper, and a good sprinkling of onion powder. Whisk it some more. You can return it to medium heat to warm it up, and thicken it up a bit more.
Viola! You have good gravy. Low-fat too! It tastes very much like white gravy mix you'd get at the store.
Note: My picky two year old loved this over cornmeal biscuits. Maybe I'll post that recipe later! :)
