5 ears of sweet corn or can about 2 1/2 cups
2 egg substitutes (add more if needed)
2 tablespoon of vegan margarine or vegetable oil
1/4 teaspoon of salt
2 tablespoon flour
1 tablespoon sugar
Scrape off kernels from the corn cobs, or use 2 1/2 cups of canned sweet corn. Place corn in bowl and add flour, sugar, egg replacers, salt and pepper to taste.
Drop batter in heated oil/margarine about the size of a teaspoon. Cook until its lightly brown on the bottom.
Turn ONCE! DO NOT press down on them. Cook on the second side until browned.
Make sure not to overcook.
