2 cups of red lentils
enough water to cover them twice
1 medium onion
1 large carrot
1/2 bulb garlic
1 medium potato
1 stalk of celery
1/2 a pepper
1 leek
1/4 cup cilantro
green onions for garnish
1 tablespoon ground cumin
4 teaspoons sea salt
1 teaspoon black pepper
Put the red lentils in large pot to boil with bay leaf and water. Stir often. Boil down till lentils are soft.
Chop the potato and carrot into small cubes. Very finely chop the onions, celery, pepper and leek.
In frying pan pour in some olive oil, add the ground cumin (which you have previously roasted) and the pressed garlic. Stir fry till golden brown.
Add the onions, celery pepper & leek till slightly caramelized.
Put this mix into the lentils and water. Add the potato and carrot. Cover and let simmer for about 30 minutes.
Near the end add chopped cilantro, sea salt and pepper. Simmer for a couple of minutes more and turn off.
Use chopped green onions to garnish!...
