1 chocolate graham pie crust (use vegan version)
1 pint size (2 cups) of mint chocolate chip soy or other vegan frozen dessert (“ice
cream”), I used Temptation Mint Chocolate Chip
2 cups of Soyatoo Whip topping or other vegan whip topping
Approx. 1/2 box of Anna’s Chocolate Mint cookies/chocolate wafer cookies or use sandwich
cookies for more crunch ~~ Anna’s cookies nearly match the chocolate crust color
Slightly soften the frozen dessert (“ice cream”). Mix the Soyatoo or whip topping into the “ice cream” until blended. Don’t allow “ice cream” to melt.
Spread about ½ of the mixture into the graham crust.
Top with a layer of chocolate cookies.
Spread the remaining “ice cream” on top.
Top with cookies.
Freeze overnight or until firm.
Thaw slightly before serving. If desired, top with extra Soyatoo when serving.
Your non-vegan relatives will love this. My dad is a very meat and potatoes guy, and he couldn’t get enough. I left the room for a little bit and the whole pie was gone! Good thing I got my piece first…
