2 cups flour
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg substitute (I used powder & add extra apple sauce)
1/3 cup oil (veg, canola etc)
2/3 cup apple sauce
1 teaspoon vanilla extract
1 cup shredded coconut
1 1/2 cups chopped macadamia nuts
1 1/2 cups white chocolate (chips, chunks etc)
A cookie is a cookie is a cookie... I'm sure there is a cookie out there like this-but I like using all the apple sauce- makes them feel a bit healthier=)
Preheat oven to 350 degrees.
Mix wet ingredients together. Mix dry ingredients together. Slowly stir the dry ingredients into the wet ingredients.
I tend to get in there & mix with my hands!
Drop onto a cookie sheet with parchment paper.
Bake for 10- 12 minutes
