1 large tortilla, any flavor
box of wild rice with seasoning
1 medium portabella mushroom
grated vegan parmesan
1/2 onion, chopped
1/2 bag vegan "meat" crumbles (like Morningstar Farms)
Start your rice first, according to the box directions.
While that is cooking, roughly chop mushrooms and dice onions. Put onions, mushrooms, and vegan crumbles into pan with olive oil and add your salt and a little garam masala (I don't measure this, I taste it).
Warm tortilla in the microwave a few seconds (hate cold tortillas). Place shrooms, onions, crumbles in tortilla.
When rice is finished, just take a big pile and dump in on top of the other mix in your tortilla. Wrap it up and done!
I just made this for a quick lunch and it was awesome.
