3 cups (loosely-packed) fresh basil
2 cloves of garlic
1/4 cup extra-virgin olive oil
1/4 cup raw pumpkin seeds
1 can (15 oz) great northern beans
salt and pepper to taste
water (as needed if too thick)
Simply toss everything into your Cuisinart and blend until smooth!
My favorite way to eat this sauce is over shell pasta with several garden-fresh tomatoes thrown in... mmmmm... tangy, creamy, and chock full of manganese, magnesium, phosphorus, tryptophan, iron, copper, vitamin K, zinc, and protein. Yum!
