4 slices of vegan whole wheat bread
2 tomatoes, sliced (heirloom , if available)
4 tablespoons of vegan pesto
kosher salt and pepper
This is really more of a method than a recipe, but here goes:[br] Toast the bread, top each slice of toast with 1 tablespoon of pesto and a few slices of tomatoes. Sprinkle with kosher salt and pepper.
We enjoyed this for a quick weekday lunch with canned lentil soup.
