1/2 cup vegan margarine, melted (I use Earth Balance)
1/2 cup natural cane sugar (e.g. Florida Crystals)
1/2 cup brown sugar
1 tablespoon flaxseed meal + 3 tablespoon water
1/2 cup nut butter of choice (e.g. soynut butter, peanut butter, etc.)
1/2 teaspoon vanilla
1 cup all-purpose flour, unbleached
1 1/2 cups oat bran cereal
Preheat oven to 350 degrees Fahrenheit.
Mix melted margarine with sugars. Add flaxseed mixture; mix well. Stir in nut butter of choice and vanilla; beat until smooth.
Add remaining dry ingredients; mix well.
Drop by leveled tablespoonfuls onto cookie sheet lined with parchment paper. Criss-cross cookies with the tines of a fork to flatten slightly. Bake 8-12 minutes (depending on your oven).
