1 can full fat coconut milk
1 block firm tofu
3 limes, juiced (or to taste)
1 teaspoon vanilla extract
1/3 cup vegan brown sugar (or to taste)
optional 1/2 cup chopped almonds
optional 1/2 cup crushed pineapple or toasted coconut
ice cream maker
Blend everything but nuts, pineapple, and coconut. Add those last. Taste test what you've got mixed.
Toss into ice cream maker for about 15 minutes. Add nuts, pineapple chunks and coconut about 10 minutes into it. Enjoy!
