1 (12-ounce) jar flat (Italian) green beans, drained
1 large tomato, chopped
1/2 red onion, thinly sliced
1/2 cup roasted red pepper strips
4 tablespoons extra virgin olive oil
1 lemon or 2 limes, juice of
salt, to taste
pepper, to taste
herbs, to taste (e.g., dill; optional)
1. In a bowl, combine green beans, tomato, onion, roasted red pepper strips, olive oil, and lemon juice.
2. Season salt, pepper, and herbs.
3. Chill. Great with wholegrain bread.
