600g dry jumbo lima beans
1 large red onion
1 bunch parsley
1/2 head garlic
1 large tin crushed tomato
1/4 cup water
1. Soak dry lima beans overnight in water (alternatively, use canned and do not soak).
2. Preheat oven to 375F. Chop onion, parsley, garlic fairly finely.
3. Throw all ingredients in large baking pan. Make sure beans are covered in crushed tomato and water. Add plentiful amount of olive oil, cayenne, pepper and salt to taste.
4. Bake at 375 for about 30-40 minutes (or until the beans are thoroughly cooked).
Enjoy warm or cold -- keeps well for a few days in the fridge. Delicious!
