2 tablespoons olive oil, divided
3 bay leaves
5 potatoes, peeled
1 teaspoon paprika, divided
1 cup spinach
1 small onion, chopped
1 teaspoon garlic salt
2 tablespoons vegan margarine
salt and pepper, to taste
1. Boil pot of water with 1/2 tablespoon olive oil and bay leaves. Add potatoes. Meanwhile, saute the onion in the remaining oil and 1/2 of the paprika until it has softened and has brown edges.
2. When potatoes are almost done, add the spinach to the boiling water. Boil until spinach becomes limp and drain. Remove spinach and throw out bay leaves.
3. Return spinach to pan, add sauteed onions, remaining paprika, garlic salt, and margarine. Mash, and add salt and pepper to your liking.
