2 bags of 10 minute brown rice
1 box of mock vegan chicken nuggets
approx. 1 cup (or to taste) teriyaki marinade
5 cups broccoli florets
2 medium sized carrots, julienne (or 1 cup pre-sliced bagged carrots)
Prepare rice as directed on package.
Defrost the vegan chicken nuggets, if needed. Empty them into a bowl along with half of marinade, let sit for about ten minutes.
In a wok, over medium heat, empty the broccoli florets and the rest of marinade (or to desired taste). Let simmer about 5-10 minutes, stirring occasionally.
Add the nuggest, and let simmer and marinate for 5-10 minutes, continuing to stir occassionally. Finally add carrots and cook about 2-5 minutes.
Empty rice in dish and pour desired amount of stir fry over it.
