8oz extra-firm tofu, cubed
1 large white onion, or more if you like onion like I do, julienned
2 cloves garlic, minced
1 tablespoon olive oil
2 tablespoon curry powder
2 tablespoon vegetable broth powder, frontier is good
2 cups water
Saute onion in olive oil for about 5 minutes. Add garlic and saute one minute more. Toss in the curry powder. Add a little water if stuff starts sticking to the bottom of the pan. Add tofu and stir to mix with onion and garlic, saute one minute. Add the water and stir in the vegetable broth powder. Bring to boil, cover and then simmer 10-15 minutes. Enjoy!
