1 onion, chopped
1 red bell pepper, chopped
1 (15 ounce) can whole kernel corn, drained
2 (15 ounce) cans chopped tomatoes
2 (15 ounce) cans pinto beans (I use 2 1/2 cups cooked pinto beans)
1 cup water
1 (1 1/4 ounce) package chili seasoning mix
1. Put everything in a crockpot and mix well.
2. Simmer all day, about 8 hours.
I serve this with whole wheat vegan bread. This is well liked by my children, thereby making it a kid friendly recipe.
