2 slices toasted whole grain bread
1/2 package of tempeh with flavoring of your choice (I prefer Veggie Organic Tempeh)
2 tablespoons. vegan cream cheese (Tofutti brand is my favorite.)
1 teaspoon olive or sesame oil
pinches of thyme, garlic, and any other herbs you like.
1 tablespoon Vegenaise or Nayonaise
Sauté the tempeh in the oil, breaking it up with a spatula as it turns golden brown, making sure all the herbs are mixed in well. Remove from heat and mix in the Vegenaise until most of the tempeh is white and creamy.
Spread cream cheese on the bread slices, and put the tempeh on them. This sandwich is best consumed in open face form with a fork for breakfast, lunch or dinner!
**If you like onions and/or mushrooms, sauté these as well with your tempeh.
