1 large cucumbers, peeled and thinly sliced
salt, to taste
1/4 cup red wine vinegar
2 teaspoons minced red onion (optional)
1 teaspoon nondairy milk
pepper, to taste
1. Lay cucumber slices in a single layer on a cookie sheet and sprinkle with salt; let sit for 10 minutes. Transfer slices to a bowl and squeeze them dry. Discard the liquid.
2. To the bowl, add the vinegar, onion, nondairy milk, sugar, salt, and pepper.
3. Chill for 30 minutes before serving or serve at room temperature.
