1/4 block firm or extra firm Tofu - frozen for chewier recipe
1 Tablespoon sweet relish
1 slice American style soy cheese, diced
salt and pepper to taste
Press tofu well. I like to use firm, unfrozen tofu because the consistency reminds me of mayonnaise with out the calories. If you would like to use soy mayonnaise, then defrosted extra firm tofu works best.
Mash the tofu in a bowl and add remaining ingredients and mix well. This can be eaten in a pita, on toast or vegan bread, or directly out of the bowl...my favorite way!
