1 cup cucumber, quartered, seeded, sliced
sea salt, to taste
1 cup hydrated instant wakame
3 tablespoons genmaisu
3 tablespoons mirin
1. Place cucumber in a bowl and sprinkle with salt; let sit for 10 minutes. Squeeze water from cucumbers.
2. To the bowl, add wakame, genmaisu, and mirin; toss to combine.
Traditional Japanese dish. Goes well with rice or udon or soba very refreshing.
