1/4 cup salsa
1 tablespoon fresh cilantro
1 tablespoon lime juice
1/4 teaspoon ground cumin
2 cups cooked rice
1 package (10 oz) frozen corn, thawed, or 1 can (11 oz)
1/2 cup chopped red pepper
1/3 cup chopped scallions
To make dressing: Combine salsa, cilantro, lime juice, and cumin.
To assemble salad: Combine rice, corn, peppers, and scallions. Mix in dressing. Chill until ready to serve. (This also tastes great warm, right after preparation!!!)
