2 handfuls gemelli pasta (or your favorite shape :))
1/2 cup frozen broccoli
1/2 chopped tomato (no seeds, please)
1 cup chopped fresh mushrooms
2 tablespoon chopped onions -- more if you like :)
Your favorite spices: I use red pepper flakes and paprika :)
Put pasta in boiling water, make sure its not sticking, keep the water at a rolling boil. Be sure to check on the cooking time of your chosen pasta. Most are about 10 minutes.
Put the broc. in a microwave safe bowl and nuke until its cooked-- usually about 2 minutes.
Cover the bottom of a skillet over Medium heat with olive oil. Sautee the onions with the red pepper flakes (if you're using :)) until the onions are translucent. Add the mushrooms, when they look almost good enough to eat (you know, pretty moist but still firm), add broccoli and tomato. This is a good time to add any seasonings as well. Cook for about one more minute and then put the heat on Low.
If you've timed everything correctly :) the pasta should be done. To check for doneness, throw a noodle at a wall. If it sticks, its al dente (or done-er). :) Of course you could always just slurp one up but most likely you'd get burned with boiling water. Either way, its your choice.
Drain the pasta and toss in skillet with warm vegetables. Mix till beautiful. Serve on a warm plate with salt or soy sauce (to taste, everyones different).
This is good for those days when you're craving pasta but are tired with the mundane-ness of tomato sauce, or you're just craving a bunch of veggies. :):)
