1 large Yukon gold potato
1 large can organic yelLow corn or 1 bag organic frozen corn
2 oz extra virgin olive oil (organic if possible)
1/2 teaspoon sea salt
1/2 teaspoon black pepper
Microwave potato 6 - 10 min depending on size. While that is cooking, cook corn on stove top with sufficient water to cover. When the corn is done remove from water, but save 2 oz of the water. Put corn, olive oil, salt, pepper in a blender or food proccessor and puree (add extra water if needed to puree. When that's done, adjust seasoning if you like. When the potato is done, put on large plate, cut open and slightly mash the potato flesh. Top with the corn puree, and enjoy!!!!!!!!!!!!
