1 portobella mushroom, cleaned
1 tablespoon vegan pizza sauce or vegan pesto
1/4 cup assorted veggies. I like to use broccoli, onions, and carrots but use what you like
1/2 soy cheese or cheese substitute (optional)
Place the portobella top down on a baking sheet and top with pizza sauce, veggies, and soy cheese. Place in preheated 350 degree oven for 20 minutes or until done. (I like to leave mine in until cheese is lightly browned).
