2 cups whole-wheat flour
1 tablespoon salt
1 tablespoon baking soda
1 cup shortening
6 tablespoon water
1 tablespoon vanilla
3/4 cup brown sugar
3/4 cup white sugar
1/2 cup Silken firm Tofu
1 Tbl. peanut butter
1 bag semi-sweet chocolate chips
Blend first three ingredients together, set aside.
Cream vegetable shortening, sugars, water, and vanilla with a beater.
Using a blender, beat tofu until smooth.
Add Tofu and peanut butter to veg shortening mix.
Add flour mix in slowly, beat until mixed well. Add chocolate chips.
Drop by tablespoons onto a cookie sheet. Bake at 350 degrees F 9-11 minutes, or until golden brown.
