1 (12 ounce) package silken extra firm tofu
1/4 cup taco seasoning (I use Tofu Mate Taco seasoning)
1/4 cup water
6 tortillas, warmed
1 (15 ounce) can refried beans
1 (6 ounce) jar salsa
1 (8 ounce) package vegan cheese, shredded, optional
1. Crumble tofu in frying pan and and fry until lightly browned, about 15 minutes. Add water and taco seasoning and continue to cook another 5-7 minutes.
2. Meanwhile heat beans in medium saucepan for about 10 minutes, until warm. When water has been absorbed from tofu, remove from heat.
3. Lay tortillas flat and add beans, tofu mix, salsa and cheese (if using), and reheat to melt cheese.
