3 large pasilla chilies
olive oil, as needed
2 cups black beans, mashed or burger-style crumbles
1/2 cup white onion, chopped
3 cloves garlic
1 (3 ounce) can tomato paste
1/3 cup celery, chopped
1/3 cup corn
1/3 cup vegan cheese, optional
sea salt, to taste
1. Preheat oven to 350 degrees F. Blanch pasillas, cut in half lengthwise (retaining stem), deseed and set on baking sheet.
2. Lightly fry onions, garlic ,and beans or meat.
3. Combine all ingredients and stuff the prepped chilies.
4. Bake for about 20 minutes, or until slightly crisp.
