1/4 cup (1/2 stick) Earth Balance, melted
1 pound pasta
6 cup water
6 tablespoons soy milk powder
3/4 cup nutritional yeast
1 tablespoon mustard
1/4 cup all purpose flour
1 teaspoon salt
Fresh ground pepper to taste
2 cups vegan cheese, shredded
2 tablespoons fresh parsley, chopped (optional for garnish)
1. Preheat oven to 400F, and mix Earth Balance with dry pasta (uncooked) in a 13 x 9 x 2 casserole or baking dish. Mix in 1 1/2 cups of the cheese. Set aside.
2. In a large bowl or measuring cup, mix water, soymilk powder, nutritional yeast, mustard, flour, salt, and pepper. Pour this mixture over the pasta mixture. DO NOT STIR!
3. Cover with foil and bake for 20 minutes, uncover and sprinkle with remaining cheese and parsley. Place back in oven and bake for 10 more minutes or until pasta is tender and sauce is thick and bubbly. Let sit for 5–10 minutes before enjoying!
