I found this awesome stir-fry recipe in my new favorite little cookbook titled "Simply Vegetarian - 100 No Fuss Recipes for Everyday Cooking" by Parragon Books. You can visit their website at www.parragon.com [1]. This cookbook offers tons of vegetarian dishes with ingredients you can substitute as you prefer. I happened to stumble upon it when I was shopping at TJ Maxx about a month or so ago. My boyfriend & I have cooked quite a few dishes from this little book! I recommend it!
So for the Stir-Fried Broccoli, here's what to use & do :)
This recipe serves 4
2 tbsp vegetable oil (or whatever oil you prefer)
2 broccoli heads, cut into florets
2 tbsp soy sauce
1 tsp cornstarch
1 tbsp superfine sugar (I didn't use any sugar when I made this dish & it turned out just fine)
1 tsp grated fresh ginger
1 garlic clove, crushed
pinch of dried red pepper flakes
1 tsp toasted sesame seeds, to garnish
1). Heat the oil in a large preheated wok or skillet over high heat. Add the broccoli and stir-fry for 4-5 minutes. Reduce the heat to medium.
2). Combine the soy sauce, cornstarch, sugar, ginger, garlic, and red pepper flakes in a small bowl. Add the mixture to the broccoli and cook, stirring continuously, for 2-3 minutes until the sauce thickens slightly.
3). Transfer to plates, garnish with sesame seeds, and serve!
I like to add 1/2 cup on quinoa and 1/3 cup of jasmin, brown, or white rice to this dish to make it more filling. I also like to add about 1 tsp of stir-fry sauce into the mixture for a little extra flavor. I don't use too much soy sauce and I prefer the less sodium soy sauce for this. I add 1/4 cup garbanzo beans from time to time. Also, to add a little extra crunch, when garnishing with the sesame seeds, throw on some rice noodles. Very yummy!
