6 large cucumbers
1 large sweet red onion
2 firm tomatoes
8 oz. vegan sour cream
1/2 cup salt
1 tablespoon sugar
1/4 cup balsamic vinegar
1/4 cup apple cider vinegar
Slice cucumbers and onions thinly and place in large mixing bowl.
Add salt and enough water to cover the vegetables in the bowl.
Mix together and let marinate for 40 minutes, stirring occasioanlly.
After 40 minutes, drain salt water off the cucumbers and onions.
Cube the tomaotoes and add into salad.
Add sour cream and sugar.
Cover the ingredients 2/3 of the way with water.
Cover the rest with vinegars. Toss and serve.
