2 tablespoons coconut oil
1 box Q&Q Fideo (Vermicelli)
3 medium cloves garlic
1 tablespoon cumin seed
2 medium roma tomatoes
1 diced serrano pepper
1 medium diced potato
2 tablespoons Knorr Caldo de Tomate
1 packet Sazón Goya with Tomato and Coriander
1/2 medium onion chopped
7 cups of water
6 oz. Boca Meatless Ground Crumbles
In a large covered skillet heat coconut oil and lightly brown the fideo (vermicelli). Pour 3 cups of water and let boil. Liquefy 4 cups of water, Roma tomatoes, garlic, cumin and pour into skillet. Add potato, serrano pepper, onion, Knorr, Goya, Boca crumbles, and let simmer for 25 minutes.
Heat up some corn tortillas on the griddle and enjoy.
